Vegetarian Maggie (picture only)

Bird's eye red chilli, parsley, lettuce, cherry tomatoes, grated carrot and spring onions. Please do not put cucumber like I did. It pulls out the flavour of the other veggies. :(

Boil the maggie until half cook then add in all of the vegetables above. Add in the seasoning provided. Stir well.

Serve.

Steamed Banana Cake

I know, I know it doesn't sound quite appetizing but trust me its like eating Steamed Kaya Oatmeal Bread at Paparich. Such an indulgence. <3 While typing this my mouth waters already* So trust me on this one. You won't regret trying.

So a few days ago I weigh myself and I was shocked to see the results. I'm too shy to say because I never expected to be that heavy. So I told my mum and myself that this time I'm gonna do it right. I wanna be strong. So I did a 3 months of eating oatmeal challenge nothing else but oatmeals unless if I want something else it would be bread. So my diet consist only of these two. However, there will be a cheat day if there is a celebration, etc but I must keep my proportion. I am training my tummy and myself to eat slowly and also in small portion. This way the tummy will feel relax and tends to be smaller.

Yesterday I went to Tesco and I saw this magazine. I have forgotten the name but it had this recipe of Steamed Banana Cake. As usual I will use that as an inspiration and create my own recipe. Using the same ingredients as their recipe but adding a few healthy items and minus a bit of unhealthy items. Remember, sugar is glucose and too much glucose is baaaaaaaaaaaaaaaaaad!

the recipe from the magazine

So here is my recipe after a long ramblings and babblings. Hehe.

Ingredients :
2 cups of flour (I used wheat flour)**
6 bananas
3/4 cups of cooking oil
4 eggs
a teaspoon of baking powder
a teaspoon of baking soda
3/4 cups of brown sugar
a pinch of salt
1/2 cup of dried coconut flakes (you can also use fresh)*.
3-4 tablespoons of oatmeal.
1 teaspoon of vanilla essence

Step 1 - In a blender beat the egg until fluffy or turns white. Then add in the sugar. Blend it until it turns pale/fluffy.

Step 2 - Add the banana, baking soda and oil. Blend.

Step 3 - Add in the vanilla essence, baking powder and salt.

Step 4 - Add in the flour. Blend it until it is well cooperated. By this time it will be a thick batter.

Step 5- Pour the mixture into a large bowl using a spatula. Add in the coconut flakes and oatmeal. Use the folding method.

Step 6 - It is totally up to you to use a cake pan or cupcakes cups. I used the cupcakes cups because I want it in a bit size pieces. Steam it for 45 minutes and never open the cover until the timer rings or else your cake will not rise. Trust me. I kept on opening the lid to check out the cake and it did not rise at all. :(

doesn't it looks so good despite the colour? I wonder how the magazine turn out so good looking haha perhaps they added orange colour?

p/s: don't forget to #DapurMekqa on instagram and let me know once you've tried the recipe :)

** you can sift the flour if you want to but I didn't since I use the blender hahaha
*Coconut flakes is the dried shaved coconut flesh. In Malay it is known as kelapa while santan is coconut milk. :)

Delicious Sticky Chicken

Assalamualaikum, hi guys :) So here is a recipe on how to make a good chicken recipe cook using air fryer or oven. It is so good that one piece of chicken is not enough! 😄😄😄

I made this recipe by improvising my sister's recipe. I will post her recipe soon. I'm sorry that I don't have the picture of the chicken because as soon as it gets to the table everyone took theirs and they loved it! :)

What you need:
8 pieces of chicken (I used drumstick as I ran out of wings)
1 tablespoon of ABC sauce
1 tablespoon of BBQ sauce
1 tablespoon of HP sauce
1 tablespoon of honey
1 tablespoon of sweet soy sauce
1 tablespoon of oyster sauce
1 teaspoon of fine white pepper
1 teaspoon of fine black pepper
1 teaspoon of all purpose
3 cloves of garlic (minced)

So just combine everything and mix it in a bowl. Then air-fried it for 40 minutes or so. Like 20 minutes on each side on 180 degrees celcius. If you are using an oven it is also the same but keep an eye on the temperature or else the chicken will turn out burn but uncooked. Goodluck! Bon apetit!

Btw this is the tablespoon I used :

1- Add all the ingredients except for the chicken cube and onion and bring it to a boil.

2- Once it is boiling, remove the chicken breast, carrots and potatoes and set it aside. Add in the onion and chicken cube. Stir.

3- Shred the chicken breast and put it back in the soup. Let it simmer on low heat.

4- Meanwhile, in a food processor of blender, blend the carrot and potato with a pinch of salt. Blend it until it is mushy like baby food. Set it aside.

Vegetarian Bake Pasta

So lately I've been taking care both of my grandmother and learn a few tips and tricks of preparing food for them especially if they're unwell or orang Melayu kata takde selera, no appetite to eat. I discover that if I cook chicken soup, porridge and something mushy at-least that will help them regain their energy. So from this I tried to experiment with a new recipe that is this Vegetarian Bake Pasta. You will need simple things as listed below.

Chop:
2 red bird's eye chilli
2 green bird's eye chilli
2 small red onion (bawang merah halus)
1 big bombay onion
1 inch ginger
3 big cloves of garlic (3 ulas bawang putih)

Boil and blend:
1 cauliflower
2 carrots
3 potatoes

Additional ingredients:
1 packet of fusilli (you can also use macaroni or any pasta that you like)
 white sauce
grated orange cheddar cheese
1 chicken/vegetable cube
white pepper
coarse black pepper
salt
all purpose
planta
dried tomatoes

Steps:

1- First things first boil the pasta as usual with a little bit of salt and oil for 10 minutes or according to the instructions given on the pack.

2- While waiting for the pasta, prepare the chopped ingredients.

3- Then boil the cauliflower, carrots and potatoes. You can also opt for other vegetables such as broccoli and mushroom or anything vegetables that is suitable to your tastebud. Once the vegetables are cooked drained them and blend it using a food processor or a blender. Set it aside.

4- Now drain your pasta. Then saute all the chop ingredients using planta or any type of oil. To be healthy you can use olive oil. Remember to saute the onions first and lastly the garlic because garlic is easily to burn. Then add a ladle of water and the chicken cube. Stir well. Then add the salt, white pepper, coarse black pepper and all purpose. The amount is up to you.

5- Add your pasta and combine into the saute ingredients. Mix well. Turn off the heat. Set aside.

6- Prepare your white sauce

7. So now your pasta, white sauce and vegetable paste is ready so its time to assemble. First you need to butter up your casserole pot. Then add a thin layer of the vegetable pasta accompanied by the pasta mix then the vegetable pasta again and pasta mix again and so on. Continue layering until you have an inch left to fit in the white sauce. So now all you need is to finely chopped your dried tomatoes then pour your white sauce on top. Spread the white sauce evenly. Sprinkle the orange cheddar.

8- Bake the casserole for 30 minutes under 180 degrees celcius. That's it! It is so simple and trust me everyone will love it! They will never notice the vegetables inside! So if your kids don't like veggies this recipe is surely a must try :)

note that I put chicken meat in my casserole because I love chicken :)

The major critic so far is my brother. Haha he is such a picky eater. Nevertheless, he is the one who pushed me so that I will cook with my heart not just with art and brains.
